Macrae Edinburgh’s new premises at Livingston were opened in May 2007. The 6000m² premises are one of the most modern seafood production facilities anywhere in Europe. They produce hot and cold smoked seafood, prepared shellfish and hand-crafted value-added products for entertaining in partnership with Waitrose - the quality food shops of the John Lewis partnership.
The £10M facility at Livingston has allowed Macrae Edinburgh to double its production capacity. The new site now employs about 230 people, most of whom moved with the business from its former premises at Granton.
Macrae Edinburgh primarily uses Scottish-sourced fish such as salmon, prawn, crab, scallops oysters, langoustine, trout, herring, haddock and mackerel. It uses a combination of high tech and hand craft methods to produce a wide variety of quality chilled prepared seafood lines.
The site has a dedicated and highly experienced team of fish smokers using both mechanical and traditional ‘Cromdale’ brick kilns to smoke up to 80 tonnes of whole salmon and 40 tonnes of hot smoked mackerel every week. A range of different fuels are used for smoking including oak, beech, birch, peat and heather - using time-honoured skill these are carefully blended to produce all sorts of unique smoke flavours for Macrae’s customers.
