| Ghillie & Glen derives its name from one of Scotland’s oldest and most traditional smoke houses. Smoking was used as a food preservation method and is embedded into Scotland’s history. Each estate would have its own smoke house, smoking a wide range of food from both land and sea. The Ghillie looked after the estate and its loch, whilst also fishing for fresh salmon to smoke in the traditional kilns. |
| The Ghillie & Glen brand has been established for over 30 years and still uses traditional methods in some of its products. Our master smokers have been perfecting the art of smoking for decades and still employ some of the traditions from those ancient smokehouses. |

| The Ghillie & Glen brand has always been synonymous with quality smoked salmon and our master smokers have spent decades perfecting the art of salmon smoking. Today Ghillie and Glen produce some of the finest smoked salmon, using only Scottish farmed fish. |
| Our traditionally smoked products are smoked in Cromdale kilns. These are traditional brick kilns were the fillets of salmon are hung rather than placed on racks. The natural draught in the kiln circulates the smoke to create a dense smokey flavour. |
| Cromdale kilns are so named after the village of Cromdale, site of the famous Battle of Cromdale in 1690. Nestled beside the River Spey in the Spey Valley still sits the original Cromdale Kiln where the Ghillie & Glen brand originates. |

| Ghillie & Glen use only Scottish farmed fish which have been reared to the highest standards of welfare and we only work with farmers who recognise their responsibility to the environment. Scottish Farmed Salmon is farmed in the fast flowing and cold waters around the West Coast and Islands of Scotland, this produces salmon that is world class and ideal for smoking. |
